Almond Butter Cookies – This classic holiday cookie comes from the Good Housekeeping Cookbook. Cut dough with a Christmas cookie cutter shape (bell, star, reindeer, Christmas tree).
INGREDIENTS

¼ cup sugar
1¾ cups all-purpose flour
¾ cup butter or margarine softened
1 teaspoon almond extract
dash salt
1 egg white, slightly beaten
1/8 teaspoon cinnamon
1/3 cup toasted diced and buttered almonds

PREPARATION
  1. In a large bowl, measure ¼ cup sugar, flour, butter or margarine, almond extract, and salt.
  2. With a mixer at medium speed, beat ingredients until well mixed, occasionally scraping the bowl with a rubber spatula. The mixture will be crumbly.
  3. With your hands, shape the mixture into a ball. If the dough is too soft to roll out, cover and refrigerate until firm.
  4. Preheat oven to 325.
  5. On a lightly floured surface, with a floured rolling pin, roll the dough into a 12″ by 8″ rectangle. With a pastry wheel or knife, cut into 3″ by 1″ strips; place on cookie sheets; brush with egg white.
  6. In a small bowl, mix a scant ¼ cup sugar with cinnamon and almonds; sprinkle on cookies. Bake for 15 minutes or until golden.
  7. With the pancake turner, remove cookies to racks; cool.

Makes about 3 dozen cookies.
