Apple Cake

Apple Cake | This recipe for Apple Cake uses ingredients typically associated with fall, but it can be made any time. We find that chopped walnuts complement the apples.


INGREDIENTS

4 cups diced apples
2 cups flour
2 cups sugar
2 teaspoons baking soda
1 teaspoon vanilla
1 teaspoon cinnamon
¾ teaspoon salt
½ cup oil
1 cup chopped nuts
2 whole eggs

PREPARATION
  • Break eggs over apples; mix with fork. Add oil, sugar, nuts and vanilla.
  • Sift flour, cinnamon, salt and baking soda. Add to apple mixture.
  • Grease pan. Add apple mixture to pan and spread evenly with a spatula.
  • Bake at 325 for 1 hour.

Serve the Apple Cake plain or add a dollop of whipped cream.
