Apple Cake with Streusel Topping (Apfel Kuchen mit Streusel) | “Excellent with coffee and even better after the first day.” – Helga the Kitchen Witch
INGREDIENTS
2¼ cups flour
½ cup sugar
½ teaspoon baking powder
2 eggs
⅓ cup butter or margarine at room temperature
zest of 1 lemon
3-4 apples peeled and sliced
½ lemon (squeeze the lemon over apples to avoid browning)
1 heaping tablespoon sugar
½ teaspoon cinnamon
PREPARATION
- Mix the flour, sugar and baking powder together; make a well in the center and add the eggs and lemon zest.
- Cut butter/margarine in slices over flour mixture. Knead the ingredients into a smooth dough. Wrap with plastic wrap and place in refrigerator for 30 minutes.
- Mix sliced apples with the sugar and cinnamon; set aside.
STREUSEL TOPPING
1 cup flour
½ cup sugar
1 stick butter or margarine
1 teaspoon vanilla
BAKING PHASE
- Mix the dry ingredients together and add the butter and vanilla to a crumbly consistency; set aside.
- Press dough into a greased 10” spring form pan bringing it half way up the sides. Poke dough with fork.
- Place apple slices core side down tightly together covering the whole bottom Sprinkle streusel over the apples. Optional: Soak ½ cup of raisins in rum and add them on top of the apples before adding the streusel.
- Bake 350 degrees for 35-45 minutes or until golden brown.
