Black Bean Burgers with Guacamole

Black Bean Burgers with Guacamole – A meatless burger you can make at home. Serve on Kaiser rolls or crisp lettuce leaves.

INGREDIENTS

2 cans black beans, drained and rinsed
2 teaspoons smoked paprika
¼ red onion, chopped fine
3 tablespoons wheat gluten
2 tablespoons dried breadcrumbs (more if necessary)
1 tablespoon fresh cilantro, finely minced
pinch of sea salt
black pepper
extra virgin olive oil

PREPARATION

  1. Mash the black beans in a large bowl.
  2. Add the smoked paprika, wheat gluten, breadcrumbs, sea salt, pepper, onion, and cilantro. Combine thoroughly, and mash to desired consistency.
  3. Wet hands and form patties out of the mixture (roughly the size of a burger). Transfer to a wax paper-lined plate.
  4. Heat a non-stick skillet to medium-high, and add 1 teaspoon of extra virgin olive oil.
  5. Place patties in the skillet, then top with a sprinkling of breadcrumbs. Cook for about 3 minutes on each side.
  6. Remove patties and immediately place them on Kaiser rolls or crisp lettuce leaves.
  7. Top with homemade guacamole and serve. (See the guacamole recipe below.)

Amy’s Homemade Guacamole

INGREDIENTS

1 fresh avocado
1 teaspoon lime juice
1 tablespoon fresh cilantro
2 tablespoons, cream cheese, softened
1 garlic clove crushed
½ teaspoon sea salt

PREPARATION

  1. Halve the avocado, remove the pit, and scoop it into a bowl.
  2. Add lime juice, crushed garlic, sea salt, and cream cheese.
  3. Mash together to desired consistency.
  4. Top on a burger.

Serve immediately.
