Hungarian Dumplings for Chicken Paprikash (Nokedli) – This dumpling is easy to make and a necessary accompaniment to classic Hungarian dishes like Chicken Paprikash. Serve with a main dish. Two recipes appear below. Variations of this dumpling appear throughout Eastern and Central Europe, including Germany (spätzle).

Hungarian Dumplings (Nokedli) – recipe one

INGREDIENTS

3 eggs, beaten
3 cups flour
1 tablespoon salt
½ cup water

PREPARATION

  • Mix all ingredients together and beat with a spoon.
  • Drop batter by teaspoonful into boiling salted water.
  • Cook for about 10 minutes; drain; rinse with cold water.
  • Drain well. Serve.
Hungarian Noodles (Galuska) – recipe two

INGREDIENTS

1 cup sifted flour
½ teaspoon salt
1 egg
¼ cup milk

PREPARATION

  1. Combine ingredients and beat until smooth.
  2. Bring to boil 3 cups of water and ½ teaspoon salt.
  3. Drop batter by spoon into boiling water; cook for 10 minutes.
  4. Drain and rinse. Serve with a main dish like Chicken Paprikash.
