Royal Mazurkas (Polish cookie)

Royal Mazurkas (Polish cookie) | After cookies have cooled, cut into 2-inch squares.Yields about 3 dozen cookies.

INGREDIENTS

1 cup butter at room temperature
¼ cup blanched, ground almonds
1½ cups all-purpose flour
1 teaspoon grated orange or lemon peel
1 sugar
¼ teaspoon salt
6 egg yolks

PREPARATION

  1. In a large bowl, cream butter until fluffy. Mix flour, sugar and salt. Alternately beat 1 egg yolk and 1/6 flour mixture into butter. Continue until all ingredients are well combined. Stir in orange peel and almonds and mix well.
  2. Roll or pat dough to fit a greased 15” by 10” by 1” jellyroll pan.
  3. Preheat oven to 325.
  4. Bake at 325 for 35-40 minutes or until golden, but not browned.
  5. Cool in pan on rack for 10 minutes.
  6. Cut into fourths and place on cooling rack. After cookies have cooled, cut into 2-inch squares.

Yields about 3 dozen cookies.
