Rumsterne (Rumstars) Cookies | This classic Christmas cookie is flavored with rum and vanilla. Helga likes to use a heart-shaped cookie cutter, but stars are depicted in the photo.
INGREDIENTS
4 cups flour
2 teaspoons baking powder
1 cup sugar
1 cup walnuts (ground)
2 eggs
1 teaspoon vanilla extract
4½ tablespoons rum or imitation rum extract
2½ stick butter or margarine (room temperature)
1 cup powdered sugar
PREPARATION
- On a board or counter top, lay the flour and sprinkle with baking powder, sugar, walnuts. Make a well and drop in the eggs, vanilla, and three tablespoons rum. Cut the butter or margarine into slices and lay over the top.
- Knead ingredients into a smooth dough.
- Set it in refrigerator for 30 minutes.
- Roll out the dough to approximately eighth-inch thickness and cut with a heart-shaped cookie cutter.
- Place on a greased cookie sheet, bake in a preheated oven at 375 degrees for 10 to 12 minutes until golden.
- Mix powdered sugar with 1½ tablespoons rum into a glaze and spread over the baked cookies.
Makes approximately 110 cookies. If you want, you can halve the recipe.
